The secret is in the spread.
Pickled Pink Onions really are the star of this dish. They add a nice pop of acidity on top, but also in the cream cheese spread to tie it all together. For the spread:
- 1 8 oz. container of cream cheese
- 1 Tbsp. chopped dill.
- 2 Tbsp. of Pickled Pink Onion Brine.
- Salt and pepper to taste.
Mix well and serve with toasted everything bagels, salmon lox, tomatoes, capers, and pickled pink onions.
